Coffee Collective was founded in 2007 by Peter Dupont, Casper Engel Rasmussen and World Barista Champion Klaus Thomsen, and the shop helped define what modern Copenhagen specialty coffee actually means. The company opened its first cafe in 2008 on Jægersborggade and has since built out a full cafe, roastery and training facility inside a former machine factory on Godthåbsvej, treating education as central to the business rather than an afterthought.

Best for Espresso Purists / Competition Pedigree: April Coffee, Copenhagen

April Coffee was founded in 2016 by Patrik Rolf, a Swedish national and 2022 World Barista Championship finalist, who left other roasting jobs specifically to build a platform for his own perspective on coffee. In spring 2023, April opened a new research and development headquarters just outside Copenhagen, formalizing the kind of technical experimentation that built the brand's competition-level reputation in the first place.

Prolog was founded in 2016 by Jonas Gehl and Sebastian Quistorff, and the shop helped make Copenhagen's next generation of specialty coffee feel genuinely less formal without ever taking the coffee itself less seriously. Prolog has grown to four Copenhagen locations, including one at Høkerboderne 16 set inside a former bookshop in the Meatpacking District, a distinctive setting that's become part of the shop's identity.

Signature drink: the house espresso, served in a space that still carries traces of its former life as a bookshop. What to order: ask what's new on Prolog's rotating specialty menu, since the shop built its reputation on not taking the format too seriously.

Best for Beans to Take Home: Kaffedepartementet, Nordvest

Kaffedepartementet operates out of a refurbished industrial building in Copenhagen's Nordvest neighborhood, itself a symbol of the area's shift from old industry to small specialty businesses. The roastery sources exclusively from Kenyan and Ethiopian highlands and roasts twice weekly specifically to keep beans at peak freshness, a narrower, more deliberate sourcing focus than most multi-origin roasters attempt.
